Lecithin ist ein pflanzlicher Emulgator, der aus Soja gewonnen wird und sich ausgezeichnet zur Zubereitung von Schäumen eignet. Es weist zudem erstaunliche Eigenschaften als Saucenbinder für „hoffnungslose Fälle" auf. Lecithin ist sehr ergiebig. Bereits eine Lecithin Zugabe von 0,6 % des Gewichts der Flüssigkeit ergibt einen stabilen Schaum, d. h. ca. 6 g Lecithin auf 1 kg Flüssigkeit verwenden. Für alkoholhaltige Medien ist Lecithin weniger gut geeignet, hier besser SucroAir verwenden. Lecithin ist in kalten Flüssigkeiten löslich. Es ist hoch wasserlöslich, verliert jedoch an Wirksamkeit in fetthaltigen Medien.
