Tasting & Pairing Guide
Water-based ratio: 1 part chocolate powder : 3 parts water
Standard Method
Heat milk (or water) until steaming. Use a frother or whisk to combine the cacao powder with the liquid until fully dissolved. A small dash of whisky may be added for extra complexity.
Express Method
Place the chocolate powder in a suitable heat-resistant bottle.
Add 80 °C liquid (do not exceed 60% full).
Shake 10–15 times, or until completely melted.
Iced Chocolate
Follow the express method using 60% hot liquid, then add 40% ice and shake again for 10–15 times.
