De wijnmaker van MVSA wilde een Cava maken die een concurrent moest worden voor menig Franse Champagne, nou dat is wel gelukt. Maar voordat het zo ver is moest men heel wat werk verzetten. De oudste wijngaarden te midden in Penedes zijn in top conditie en geven hele krachtige trossen. Door de diepe wortels nemen ze heel veel indrukken op uit de rijke bodem met als doel een volle tros te weeg te brengen. Het klimaat is daarbij ook erg belangrijk want de oude stokken staan op een unieke plek. Veel zonneschijn door de zuidelijke helling geeft de druiven veel rijkdom. De frisse wind zorgt voor verkoeling tijdens de warme zomerdagen en geeft de druiven een natuurlijke frisheid. Ook deze Reserva wordt gemaakt met de druiven Macabeo, Xarel-Lo en Parellada.Lange lagering voor de MVSA Brut Reserva
Als de perfecte rijpheid is bereikt van de druiven worden ze voorzichtig en met de hoogste precisie geoogst. Vroeg in de ochtend worden ze binnen gehaald en alledrie apart vergist, dit om later de blend te maken. Een klus die we wel over kunnen laten aan de wijnmaker van MVSA want hij heeft een schat aan ervaring. De flessen worden gevuld met gist en suiker en voor minimaal twintig maanden gerijpt in de prachtige kelders van MVSA. Hij krijgt alle tijd om te ontwikkelen en zijn bubbels op te bouwen. De mousse oftewel bubbels zijn erg zacht en heel stijlvol en dat is het kenmerk van deze MVSA Brut Reserva.Vol en zeer krachtig deze MVSA Brut Reserva
Bij het open maken van de fles ruiken we direct een overweldigende geur van wit fruit, gebrande toast, amandel en iets van lentebloesem. Bij het inschenken van deze top cava zien we een diep gele kleur met een licht groene schittering. Maar wat nog meer opvalt zijn de hele lichte kleine belletjes die het glas vullen. Met onze neus aan het glas ruiken we een diepe geur van abrikozen, perziken en wat vers gebakken brood. In de smaak is hij een topper, zeer vol en romig met dikke smaken van wit fruit, vanille, toast en gebrande noten. Echt een Reserva kwaliteit, uniek!Shipping Notes
