Nodus Cava Brut Nature Reserva is een elegante mousserende wijn uit Valencia, gemaakt van Chardonnay en Macabeo. Deze cava wordt geproduceerd volgens de traditionele methode met een tweede gisting op fles en rijpt minimaal 24 maanden sur lie. Dankzij de handmatige dégorgement en volledig droge stijl (Brut Nature) is dit een verfijnde, gastronomische bubbel met karakter en frisheid.

Wijngaarden en regio

De druiven zijn afkomstig van Finca El Renegado, gelegen nabij Caudete de las Fuentes in het westen van de D.O. Valencia. De wijngaarden liggen op ongeveer 600 meter hoogte op kalkrijke bodems. Dankzij het mediterrane klimaat met verkoelende nachten behouden de druiven hun frisheid en spanning, wat essentieel is voor een complexe mousserende wijn.

Vinificatie en rijping

Nodus Cava Brut Nature Reserva wordt gemaakt volgens de traditionele methode. Na de tweede vergisting op fles rijpt de wijn minimaal 24 maanden sur lie. De remuage en dégorgement gebeuren volledig met de hand. Bij de dosage wordt geen suiker toegevoegd, wat zorgt voor een strakke, droge stijl met pure expressie van fruit en terroir.

At the same time, he reminds us that hope remains, that we have much to learn from the Global South, and that there are many silenced voices that must urgently be heard.
